This
cookbook is the culmination of the past eleven years of cooking
without milk, eggs, peanuts and nuts. You will find useful
"real life" recipes and resource material for those
managing egg, dairy or nut allergies. These are not just recipes
created in a lab.
When Donna Beckwith's son Aaron was born, he was happy, healthy
and exclusively breastfed, but a persistent diaper rash had
her very concerned. The information about food allergies and
breastfeeding was very limited in 1993. Some doctors did not
even believe there was a connection.
Donna began the process of eliminating milk and other foods
from her diet. She kept a detailed food diary and journal
of Aaron's skin condition. Throughout the next nine months
the foods she isolated in addition to milk were wheat, peanuts
and nuts. She had not singled out egg, but she had effectively
avoided most egg protein by eliminating baked wheat products.
When Aaron was 11 months old, doctors confirmed that Aaron
was reacting to allergens passed on in breast milk, indicating
he was highly allergic to egg, milk, soy, peanuts and nuts.
Through personal trial and error, Donna created recipes that
eliminated the allergens AND taste great! These recipes have
also stood the test of the tastes and needs of a growing boy.
These egg, nut and dairy free recipes can be used if one
or all three allergies exist. If you only have allergies to
eggs, you may include the dairy and nuts. Cooking to accommodate
these allergies need not be boring or mundane. Decadent desserts
such as cakes, cookies, frozen dessert squares and caramel
corn are proven favourites. Other sections include delicious
recipes for egg, nut and dairy free pies and crisps, breads,
muffins, salads and sauces, main dishes, icings and soups.
The resource section will assist with managing and coping
with food allergies day-to-day as well as more complicated
situations including restaurants, parties, catered meals and
traveling. A comprehensive list of organizations that offer
reliable information is also included.
Donna Beckwith has an educational background that includes
both Licensed Practical Nursing and a Bachelor of Social Work
degree.
